General observations noted during the inspection.
1. Temperatures
-Walk-in cooler and walk-in freezer maintained at a satisfactory temperature.
-Display coolers maintained at 4C.
-Thermometer in refrigeration units visible.

2. Sanitation
-Handsink in kitchen and staff washroom equipped with paper towel, hot/cold running water and liquid soap.
-High temperature dishwasher measured to be sanitizing at 74C at the utensil surface.
-Compartment sink with drain plugs available for manual warewashing.
-Chlorine test strips available.
-Bleach spray sanitizer measured to have 200ppm chlorine.
-Flour and sugar stored in pest-proof containers.
-Stand mixer cleaned and sanitized after use as indicated by operator.
-Premises maintained in sanitary condition.

3. Food storage
-Foods observed to be covered in refrigeration units and labelled with preparation date.
-Shatterproof covering for the light bulb in the walk-in cooler and freezer visible.

4. Pest control
-No pest activity detected. Premises serviced by professional pest control company.

5. Administrative
-One staff onsite observed to have valid and current FOODSAFE.
-Permit posted in visible location.

NOTE: Discussed with person in charge about purchasing a waterproof probe thermometer with a cover and min/max function to monitor that the final rinse temperature of the dishwasher reaches at least 71C for adequate sanitation.
