- Hand washing stations supplied with hot and cold running water, liquid soap, and paper towels
- Bleach sanitizer solution in spray bottle measured to be at 200 ppm
- High-temperature dishwasher reached 75C at dish surface during rinse cycle
- All coolers were maintaining temperatures at 4C or colder
- All freezers were maintaining temperatures at -18C or colder
- Foods being reheated at time of inspection - ensure internal temperature of food reaches at least 74C when reheating
- Discussed cooling procedures - OK
- Most food items were stored properly covered in coolers and freezers
- Dry storage area satisfactory. All dry ingredient bins were covered, no scoops were being stored directly in dry ingredients.
- General sanitation satisfactory. Reminder that ventilation canopy baffles must be cleaned regularly.
