308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Upright cooler was at 4.6 to 5 degrees C at the time of inspection. This cooler was empty of cold potentially hazardous food (milk and whipping cream).
2. Supervisor informed they still need to install a wall-mounted paper towel dispenser and order a toilet seat cover in the accessible washroom.
Corrective Action(s): 1. Adjust, repair, or re-service the cooler so that it is maintained at or below 4 degrees C; Correct within 1 week. Do not store cold potentially hazardous food (such as the milk) in this cooler until it is maintained at or below 4 degrees C. Contact the district Environmental Health Officer for a follow up inspection. Supervisor informed that they have not tried to adjust the cooler yet and the technician was going to assess it this week.
2. Ensure there is either single-use paper towels via a wall-mounted dispenser or a functional air hand dryer available in the accessible washroom; Correct within 1 week. Replace the broken toilet seat cover as soon as possible.

Follow up inspection:
-Permit to operate was posted in a conspicuous location.
-Chemical test strips to monitor the concentration of Quaternary Ammonium Compounds (QUATS) sanitizer were available on-site.
-Supervisor informed that they have discontinued use of the Peroxide multi surface disinfectant and cleaner since they currently do not have chemical test strips to monitor its' concentration. QUATS sanitizer is used to sanitize both food contact and non-food contact surfaces as per Supervisor.
-Tools were available on-site to disassemble the tomato slicer. Supervisor informed they use the tomato slicer usually every second day and have been disassembling it immediately after each use and prior to washing, rinsing, sanitizing, and air drying it.
-Thermometer was available inside the upright cooler near the front service area.
-Ladies washroom was accessible at the time of inspection. This washroom was stocked with toilet paper in both washroom stalls and handsink was properly supplied.
-Repairs were made to the mens' washroom. Toilet was flushable and handsink was supplied with liquid soap, hot and cold running water, and single-use paper towels. Supervisor informed they would wall-mount the paper towel dispenser in this washroom.
