Cooling units OK. Less than 4 C.
**Deep fried rolls must be cooled for no more than 1 or 2 hours after frying and prior to storage in cooling units for future use. Make sure staff follow these procedures.
**Bean sprouts on ice. Good.
Make sure staff replace ice after lunch rush and prior to dinner rush at all stations where ice is used to keep food cold.
Bleach solution available in main bucket by dishes and in spray bottle. Both measure between 100 and 200 ppm. Good.
**Try and have a small bleach container for cloth wipe down purposes close to food prep area. Make sure to replace solution every couple of hours.
Dishwasher at about 50 ppm.
Handwash stations good and stocked.
