Observation:
At time of inspection, the only staff present did not possess a valid FoodSafe level 1 certificate or a recognized equivalent course. There must a staff working, at all times, that possess a valid FoodSafe level 1 certificate so they have the knowledge to safely process food and clean the premises.
Corrective Action(s):
Immediately schedule at least one staff member, on each shift, that possess a valid FoodSafe level 1 certificate (or a recognized equivalent course). Have staff enroll and obtain the FoodSafe level 1 certificate. Go to www.foodsafe.ca for a dates and location of courses.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -16C or colder; hot holding above 60C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach solution in spray bottle had [Cl2] of 200ppm.
- 3-comp ware washing being done. Dish soap and bleach present for washing and sanitizer.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups; and foods stored 6" off the floor on racks and shelves.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is satisfactory. Exhaust canopy was professionally cleaned and service in October 2023, next service due in March 2024.
- No signs of pests.

ACTION
Schedule staff members that possess a valid FoodSafe level 1 certificate. Have staff obtain the FoodSafe Level 1 certificate.
The exhaust canopy and filters MUST be routinely cleaned between the professional cleaning. The canopy and filters should be cleaned at least once a month.
Train staff that surfaces must be cleaned with hot soapy water to remove food and grease. It then must be sanitized with a bleach and water solution to kill germs. A sanitizer does NOT remove food and grease, it only kills germs.
