Walk through of the entire facility should be carried out at the start of the day. Remove all droppings and sanitize areas.
All food contact surfaces and equipment are to be sanitized at the start of the day.

Seal all entry points with rodent proof material. Tape is not adequate as rodents can chew through it.

Have in place an integrated pest management program carried out by a pest control operator.

Document all measures taken.

Pellets with mice droppings have been removed.
Mice droppings still observed behind some equipment. All droppings must be cleaned immediately.
Focus cleaning efforts behind and underneath equipment.
Sanitize all food contact surfaces and equipment at the start of the day.
Do not use any foods that have become contaminated with pests.

Upright cooler temperature at 4 C - good.
All refrigeration units equipped with functioning thermometers - good.
Precooked taters trays stored in walk-in cooler. Only taken out 1 or 2 trays at a time and used within 2 hours.
