Observation: No paper towels available at the hand wash station.
Corrective Action(s): Install a wall mounted paper towel dispenser at the kitchen hand sink (Immediatley).

Observation: Build up of grease and food debris noticed on the floor especially in all corners and underneath equipment and food boxes stored on the floor
Grease build up noticed in the fume hood filters..
Corrective Action(s): Clean floor thorughly in the entire kitchen after moving all equipment and boxes. Ensure all food boxes and containers are stored at least 6 inches off the floor to allow for easy cleaing ( By June 8, 2018).

Clean the fume hood filters with hot water and degreaser every 2-3 weeks.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: White metal upright cooler and cooler used for storing eggs at 6-8 degrees C at the time of inspection.
Corrective Action(s): Repair or service both coolers so that these coolers maintain 4 C or below. Replace the white upright cooler with a new one if not repairable ( Immediately).

Comments

* No temperature logs kept for any of the coolers or dishwasher final rinse.
As indicated in the previous inspection, you must monitor and record cooler temps and dishwasher final rinse
temperatures at least once a day. Failure to keep monitoring logs will result in further enforcement action.
* Kitchen requires some organizing so that it is easier to clean ( By June 10).
