Comments

- Routine inspection for meat processing area, which is separate from the pizza/retail area. Meat processing area was not in operation at time of inspection.
**Please provide health inspector with an up-to-date list of meat products made onsite for retail sale.
- Hand sink properly supplied with hot and cold running water, liquid soap, and paper towels.
- Walk-in cooler measured at 3C.
- Walk-in freezer measured at -18C.
- All meat processing equipment maintained in sanitary conditions.
- 2-compartment sink available for manual warewashing.
- Bleach available for sanitizing surfaces and equipment when meat processing area is in operation.
- Operator mentioned potentially replacing walk-in freezer with upright freezer(s) and re-locating/replacing 2-compartment sink and drain board. **Ensure to submit floor plan drawing proposals for health inspector to review and approve prior to making any changes.
- Note: If replacing walk-in cooler, new upright freezers would need to be of adequate capacity for storage of frozen items.
