Observation (CORRECTED DURING INSPECTION): All equipment and utensils previously washed in the dishwasher have not been adequately sanitized.

Correction: all eqiupment and utensils must be manually washed and sanitized until the dishwasher can be repaired.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Tub of chicken wings and drums in prep sink thawing in room temperature. Surface temperature of the food at the time was 2C. Operator stated they began thawing 30 minutes prior and running water was just turned off.

Correction: cold running water was turned back on.
> Thawing food must remain either under refrigeration or under cold running water until they are ready for use. Do not turn off the water early.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Cleaning is required in these areas:
> Walk-in cooler: mildew buildup on fan cover.
> Prep table next to dough mixer: droppings and food debris noted on shelving.
Corrective Action(s): Clean and sanitize above mentioned areas. Remove droppings by wiping with a bleach solution - do not vacuum droppings.

Observation: Low temperature dishwasher was not achieving adequate sanitizing concentration. Less than 10ppm chlorine was detected after several runs.
Corrective Action(s): Operator called mechanic during inspection. Dishwasher must be able to achieve 100ppm chlorine residual for sanitizing.

> Currently serving food and non-alcoholic beverages only. No liquor or beverages served from the bar other than fountain drinks.
> Facility is using only take-out containers, pizza boxes and single-use utensils due to the pandemic. Glasswasher not in use.

General:
> Handsinks and staff washroom sinks supplied with hot+cold water, liquid soap and paper towels.
> 200ppm QUATS sanitizing solution available from wall dispense and in sanitizer buckets and spray bottles.
> Ice machine maintained in sanitary condition.
> Vent hood was professionally cleaned today (December 29). Next service is scheduled for June 29, 2022.
> Pest control contract is in place. Services are provided twice a month by Orkin.
> General sanitation is satisfactory with the exception of above mentioned areas.

COVID Controls:
> Facility is not open for table service. Customers order at the counter and pick-up food themselves.
> All customers are checked for vaccine passport at the entrance.
> Reminder: as of 12:01AM December 31, 2021, vaccine QR codes must be physically scanned. Visual checks are not allowed.
