Observation (CORRECTED DURING INSPECTION): Frozen meat in inserts was thawing on the floor.
Corrective Action(s): Never keep food on the floor. Operator moved meat to cooler at time of inspection.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Frozen meat was again, thawing out at room temperature. Meat was still frozen at time of inspection.
Corrective Action(s): Operator returned meat to cooler. **Food must not be thawed out at room temperature. Only thaw food the following acceptable ways:
- In the refrigerator overnight
- Under cold, running water at temperatures less than 4C.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation (CORRECTED DURING INSPECTION): One piece of cardboard was still being used to line floor. Large amount of grease had accumulated under the cardboard.
Corrective Action(s): As discussed previously, do not use cardboard to line any floors/work surfaces. Cardboard cannot be easily cleaned and sanitized. Clean the grease accumulation.

Comments

- All hand washing stations are now supplied with soap and paper towel. Paper towel dispenser in main kitchen area has been fixed and is working properly. **Ensure this sink is only used for hand washing, NOT for prepping food.
- Bleach sanitizer solution was available at 200 ppm. Reminder that only 1 tsp of bleach is needed for 1 litre of water.
- Upright cooler in back of kitchen is now at 4C
- All coolers are now equipped with accurate thermometers
- Area around dishwasher has been cleaned - good.
