Observation (CORRECTED DURING INSPECTION):
Frozen chicken being thawed in container with water. However, only about half of the bag is emerged in the water.
Corrective Action(s):
Ensure when thawing foods:
- Fully emerge sealed product in water that is changed every 30 minutes, OR
- Fully emerge sealed product under cold running water, OR
- Thaw at 4 degrees Celsius or below in a cooler, OR
- Thaw in a microwave.

Routine Inspection:
Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
All temperatures met health requirements:
- Coolers maintained at or below 4 degrees Celsius (40 degrees Fahrenheit).
- Hot holding maintained above 60 degrees Celsius (140 degrees Fahrenheit).
QUAT sanitizer in spray bottle = 200 ppm.
Ice machine clean. Ice scoop stored in designated container.
High temperature dishwasher sanitizing with 74.6 degrees Celsius at plate level after final rinse cycle.
- NOTE: it took 3 attempts before dishwasher reached above 71 degrees Celsius at plate level after final rinse cycle.
- Ensure temperature of dishwasher reaches at least 82 degrees Celsius (180 degrees Fahrenheit) at manifold (look at digital temperature) for adequate sanitation.
General food storage practices good:
- Food covered and protected from contamination.
- Food stored at least 6 inches off the floor.
- General organization of food satisfactory.
No signs of pest activity at the time of inspection.
