Observation: Rodent droppings were cited under the pan storage area and behind the flour storage area. Rodent nesting looking material was cited beside the proofer.
Corrective Action(s): Remove all rodent droppings with 1:9 (bleach:water) mixture. Soak the droppings with sanitizer for 5-10 minutes then wipe it using paper towels. Ensure proper personal protective equipment is used. Contact your professional pest control company to continue to monitor for entry points. Increase general sanitation to discourage attracting rodents to bakery department. Correct this as soon as possible before April 9, 2021

Observation (CORRECTED DURING INSPECTION): An opened container of non-food grade oil (for equipment) was stored on top of food handling area. The oil was removed at the tiem of inspection.

Hand washing station was equipped with hot and cold running water, liquid soap and paper towel.
All the coolers were at 4C or below
Temperature log is maintained and up-to-date
Walk-in freezer was at adequate temperature
QUATS sanitizer bottles were at 200 ppm
High temperature dishwasher's sanitizing cycle was measured at 71.4C at the plate level.
General food storage is adequate. All goods were >15cm off the floor.
General sanitation of equipment is adequate
Employees demonstrated high level of personal hygiene
