Corrective Action(s): If grinder is in use, do not store on this storage rack. Only store grinder on rack after it has been cleaned and sanitized. Placed grinder in dishwahsing area at time of inspection.

Comments

- Dry storage room floor has been cleaned and reorganized
- Ventilation canopy baffles have been removed for cleaning. Ensure to replace baffles.
- Most food items in walk-in cooler were covered. Ensure any trays/containers of food not used on the same day is covered; food must not be left uncovered overnight.
- No food was stored directly on the floor
- No frozen food thawing out at room temperature at time of inspection
- Ensure all equipment is cleaned and sanitized after each use. Equipment must not be left dirty overnight.
**Continue cleaning and sanitizing ventilation canopy and all floors under cooking equipment and storage racks on a weekly basis.
