Observation (CORRECTED DURING INSPECTION): 1. Cooked brown rice in the rice cooker measured with an internal temperature of 55C.
2. Spicy chicken at the front hot holding unit measured at 58C.
Corrective Action(s): Rice were discarded and new one was being made. If the rice cooker can not hold rice at 60C or above, it must be changed or serviced. Staff increased the temperature at the hot holding unit and reheated the spicy chicken to 91C. All hot potentially hazardous food must be kept at 60C or above.

Observation (CORRECTED DURING INSPECTION): Quaternary ammonium (QUAT) sanitizer in buckets and at the 3 compartment sink measured at around 100 ppm. Sanitizer were mixed by the staff manually.
Corrective Action(s): Staff added one additional pump into the sanitizing compartment at 3 compartment sink. QUAT sanitizer concentration measured at 200 ppm. Staff filled the buckets from the 3 comp sink. Ensure QUAT sanitizer is maintained at 200 ppm to 400 ppm. Clean and sanitize all food contact surfaces on site.
