Observation (CORRECTED DURING INSPECTION): Potentially hazardous foods stored in warmers were not stored at a temperature of 60C or above. The follownig internal temperatures were recorded:
- cooked vegetable samosas 19C
- cooked chicken 24C
- Curry chick peas 32C
All potentially hazardous were removed from the warmers and not for sale.
Corrective Action(s): All potentially hazardous foods stored in any hot holding used must be kept at a temperature of 60C or above. As an alternative, potentially hazardous foods can be stored in a cooler unit at 4C and reheated upon customer's requested. The food item must be reheated to an internal temperautre of 74C or higher.
