Observation (CORRECTED DURING INSPECTION): Basket of shrimp was stored on the counter next to dish wash area, 20C. Operator said this was defrosting, unattended.
Soup in container, 20C kept out during lunch for ease of reheating.
Items in cooler top >4C, stored during lunch for 2hrs. Cooler bottom <4C.

Corrective Action(s): Move items to cooler bottom and other cooler that is <4C.
Keep shrimp stored in coolers.
Discard if food items are being stored for more than 2hrs above 4C.
Ensure that all items are defrosted in cooler or under cool, running water, not out unattended at room temperature.
Operator moved all items to fridge <4C during the inspection.

Hand wash station supplied with liquid soap and paper towel in dispensers.
Dishwasher final rinse temperature >71C.
Kitchen areas are tidy and have adequate sanitation:
Food storage areas are organized. Clutter and crates have been removed. Thank you.
Dry storage items are kept covered in lidded containers. Thank you.

Sanitizer spray bottle replenished during the inspection, 100ppm chlorine.
Operator used warm water. Please ensure this is refreshed with cold water and chlorine by tomorrow.

No signs of pests at the time of inspection.
Outside around premises: walkway and storage at the back - clutter has been removed. Freezers tops have been cleaned. Thank you.
Please continue to keep clean and monitor activity both indoors and outdoors.
Recommend to hire pest control contractor or speak with building owner regarding traps outdoors.
