Observation: Sanitizing bucket for wiping rgs measured at 0pppm chlorine. Rags used to wipe surfaces must be kept in clean and sanitary condition so that cross-contamination between food and food contact surfaces does not occur.
Corrective Action(s): Store rags in 100-200ppm chlorine solution and change out solution regularly to maintain effectiveness of sanitizer.

Observation: Handsink being occasionally used to store/thaw food. Handle for handsink missing, paper towels for handsink not present. Handsinks should be fully accessible to staff and stocked at all times to ensure that staff are able to wah hands at any point during operation.
Corrective Action(s): Repair handsink handle, stock with paper towels. Ensure that the handsink is solely used for hand washing.

Good things to note:
- Dishwasher at 71C (high temp)
- Walk-in cooler at 2C
- Prep coolers at 4C or less
- Walk-in freezer at -18C
- General sanitation acceptable, but for a few noted areas:
ventilation grills above fryers should be cleaned as there is some grease build-up
ice machine needs cleaning
