Observation: Sanitizer bottle for a low temperature dishwasher was empty at the time of inspection.
Corrective Action(s): Immediately. Use single service utensils only. Chemical sanitizing agent is required. Service the low temperature dishwasher.

Observation (CORRECTED DURING INSPECTION): Two pizza baking pans stored on top of the handwashing sink, which near the pizza oven.
Corrective Action(s): The nandwashing sink must be available all the time (keep it unobstructed).

Observation: - Two packages of spinach stored on top of eggs in the walk-in cooler.
- An open bag with flour stored on the floor (near the dough mixer) at the time of inspection.
- Ice scoop is totally covered by ice in an ice cube maker machine.
- Food items stored front of the mop sink.
Corrective Action(s): - Food storage in the walk-in cooler must be organized. All food must be stored safely.
- All food must be stored above the floor.
- Ice-scoop must be stored safely (e.g., handle up or outside the ice maker in a clean container/ice scoop holder).
- Food must be stored away front the mop sink.

Observation: Accumulation of food debris and dirt noted under, around, on, and behind equipment.
Corrective Action(s): Cleaning is required. Make sure that pallets are rotated and floor under those pallets are cleaned.

Hand sinks supplied with liquid soap and paper towel; hot & cold running water.
Fan hood - satisfactory.


Friendly reminder: Display case for pizza (no hot holding); therefore, ensure:
1. Time - labeling procedures (e.g. stickers).
2. Records (e.g. name & volume of food, time put out & time discarded and temperature of food when removed from hot or cold temperature control.)

Note: The facility has delivery at the time of inspection. Great amount of food is delivered. A storage space is very limited. Highly recommended to break one delivery to multiple deliveries. It is not possible to safely accommodate that amount of food in the premise.
