Observation (CORRECTED DURING INSPECTION): One sanitizer bucket had insufficient concentration -measured at ~0ppm -REPEAT from last routine inspection back in December 2015-
Corrective Action(s): All sanitizer buckets must be maintained >200ppm as per your QUAT type test strips

Further repeat infractions will require increased enforcement (i.e. Orders, tickets)

Observation: Fruit flies and drain flies observed in display case and corner area next to undercounter fridge
Corrective Action(s): Thorough cleaning and sanitizing food contact surfaces and disinfecting other surfaces is essential to eliminate these pests

-floors for mats and tiling were sticky at time of inspection -indicative of insufficient cleaning -any sugary/sticky surfaces serve as food for these insects

Observation: Floor areas are sticky in main area
Cupboards under 3-compartment sink has food debris and garbage there
Corner area next to 2-door undercounter fridge is filthy and insect activity
External storage room -garbage and debris under shelves
Area behind Espresso machines is filthy
Corrective Action(s): These areas need more regular cleaning and sanitizing/disinfecting
Mopping needs to be done minimum nightly and as needed throughout the day
Plastic matting needs to be cleaned and washed out daily

Reviewed Manual Dishwash Method with operator: wash-rinse-sanitize at >200ppm QUAT concentration as per test strips
Reused wiping towels for food contact surfaces placed into sanitizer bucket
-checked and verified

Daily tracking sheets maintained for fridge

General Sanitation
-all goods maintained off the floor >15cm to facilitate cleaning and monitoring pests underneath

Handsinks well stocked single service drying method, soap in a dispenser, hot/cold water and clear for access
