Observation:
Build up of food debris on glass cooler doors and door tracks; and flour dust accumulated on surfaces. This can attract pests.
Corrective Action(s):
More detailed cleaning of the mentioned ares and all surfaces requires to be done on a daily basis to remove the food debris.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers below 4C; freezer was -13C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottle had [Cl2] of 200ppm.
- All food stored in food grade containers; covered; stored in groups with proteins on lowest shelves; and stored 6" off the floor.
- Exhaust canopy was professionally clean in January 2020 and next cleaning due in January 2021.
- New light fixtures installed in premises. Light level is good and above 15 light candles.
- General sanitation level is satisfactory, but improvement needed in the mentioned areas.
- No signs of pests, but owner indicated they had a problem in the Winter and eliminated them. Door guards and blocking of holes have been done. Good sanitation is another key in preventing a problem.
- No new menu items can be produced at this time, until approval is provided from the City Building Dept. and Fire Dept., with regards to the suitability of the current exhaust canopy system.
- Meat grinder used for animal fats, and cleaned after each use.
