Observation: Double door freezer between walk-in cooler and prep table is measuring -4C, this must maintain -18C or less.
Corrective Action(s): Adjust/repair unit so it can maintain proper temperature. Replace thermometer if working one cannot be found.

Observation: Areas noted in the initial inspection have not been fixed with in stated time line.
Corrective Action(s): Repair the holes in the walls on either side of the wall backing the two compartment sink, wall damage left of the two compartment sink (recommend metal capping here), replace/cover the top of the shelving unit left of the stove. Due: October 24th, 2017.

**Daily temperature logs not being maintained. Strongly recommend these are filled out daily to ensure all temperature controlled units are maintaining their respective temperatures.
** Fly strip found hanging above passage in front of white upright freezer. While this is not an area that food is not prepared under, food does pass through this are. Relocate strip to an area where there is little to no chance of flies dropping off this strip into food.
Reminder: when placing food into the walk in cooler to cool down, leave the cover partially off to allow for heat to escape.
Other observations:

√ Food up off floor ≥6”, ready to eat foods stored above raw foods
