Observation (CORRECTED DURING INSPECTION): Scoops for cooked proteins left on counter unprotected from contamination.
Corrective Action(s): To make sure germs don't grow on scoops, keep the scoops in basin of quats sanitizer at 200 ppm. This is a no rinse food safe sanitizer. Or, keep scoops in clean water that is able to remain below 4 C. Ice bath is a good option.

Make sure lids for cooked proteins in place between uses. This will help food remain above 60 C and minimize opportunities for pathogen growth.
