Observation: Dishwasher sanitizing cycle does not consistently santize at 50 to 100 ppm chlorine solution. Less than 50 ppm chlorine detected. Operator states it has not been working for a week and has called his service technician for repair. At the time of inspection staff were manually washing, rinsing and sanitizing using three compartment method with chlorine sanitizer.
Corrective Action(s): Repair required for dishwasher so last sanitizing step reaches 50 to 100 ppm chlorine at the plate. In the mean time continue washing and sanitizing using the three compartment sink manual method. Correction required in one week.

Dedicated hand sinks with liquid soap and paper towels available.
Staff demonstrate good personal hygiene and sanitary hand washing.
Washroom is sanitary with fully stocked hand sinks.
Food protected from contamination. Food is from an approved source.
Food product in walk in cooler is covered with food grade covers - good.
Raw protein stored on bottom shelving away from ready to eat foods to prevent cross contamination - good.
Temperature holding is adequate and in use with accurate thermometers and logs.
Take out containers and utensils are sanitary.
3-compartment sink in use set up in use. Chlorine sanitizer at 100 ppm concentration.
Chemical test strips in use.
Valid Permit posted in conspicuous location.

Holding units:
Coolers at 4C and below. Freezers at -18C and below. No hot holding at time of inspection.

Back kitchen not in use and currently under going renovations.
Ensure construction does not impact/contaminate food processing and service.
Contact EHO for inspection of back kitchen for approval for food service.
