Observation (CORRECTED DURING INSPECTION): Sanitizer for food contact surfaces was not available at the time of inspection.
Corrective Action(s): Make the QUAT sanitizer at the very beginning of the operation. Ensure 200 ppm concentration for QUATs.

Observation: 1. A number of food items in containers (ie. doughs, cooked chicken, etc.) in the walk-in cooler was not covered with lids.
2. Raw chicken containers were stored next to ready-to-eat foods such as cooked chicken, vegetables.
Corrective Action(s): 1. Cover all foods to prevent contamination.To be corrected by : 1 day
2. Separate raw chickens from ready-to-eat foods to prevent cross contamination. Corrected during inspection.

Observation: Observed an open back door, large gaps in the garage door that are directly connected to the facility.
Corrective Action(s): Install weather stripping. Close the door after receiving to prevent entry of pests. To be corrected by 2 weeks

Observation: Observed black grimes, build-up of dusts on following surfaces:
- light switches
- mixer handles
- mixer bowl
- floor
- ventilation hood
- door handles (ie. cooler door, freezer, etc.)
Corrective Action(s): Clean and sanitize the above mentioned areas. To be corrected by 1 week.

Handwashing stations were fully equipped with paper towel and soap.
Temperatures of fridges on-site were measured at 4C or below.

*The back area of the restaurant is clutters with items such as unused dishes, storage boxes, etc.
Please organize. Remove any unnecessary items. This will help prevent the entry and harboring of pests. It will also help with cleanliness of the facility.

*Ensure 2 compartment/ 3 compartment dishwashing is conducted when washing dishes. "soap/rinse then sanitize"
