Observation (CORRECTED DURING INSPECTION): Wiping cloths were stored directly on the food preparation surface of the under-counter prep cooler.
Quats solution placed in the food preparation area was heavily soiled and concentration was only at 50ppm.
Corrective Action(s): All wiping rags need to be stored in a sanitizing solution unless they are discarded after each use to cross contamination.
Change quats solution regularly to each it is not heavily soiled and has a concentration between 200ppm to 400ppm.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): Food handling was handling washed chicken stored in a container and then proceed to have opened the undercounter prep-cooler, rinse their hands with a spray hose, and grabbed a clean dishwasher to portion customer's food.
Corrective Action(s): All food handlers must properly washed their hands with warm water and liquid soap after any chance of contamination such as the handling of raw meat products. The undercounter cooler door and dishware was sanitized at the time of inspection.

Follow up inspection conducted and the following were noted:
Pest company had provided service to the facility on May 21, 2019. Pest report available. Ensure pest report also indicates the level of pest problem.
No droppings noted at the time of inspection.
More thorough cleaning was noted as there was no build-up of old food debris underneath and around the cook line and prep-line.
