203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 50L pot of lentil soup made the previous night was in the walk-in cooler at 30C. This is a repeat violation.
Corrective Action(s): Hot potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less to prevent the growth of pathogens and/or the formation of toxins. Lentils were discarded at the time of inspection. To rapidly cool foods, items can be placed in shallow containers (1-2 inches in depth), cooled with an ice wand, cooled in a water bath, etc. Further improper cooling of foods will result in the issuance of a violation ticket.

Observation (CORRECTED DURING INSPECTION): Staff were observed wiping their hands on their aprons throughout the inspection. Both staff members completed their FOODSAFE Level 1 equivalence programs 6 days ago (September 06, 2023). This is a repeat violation.
Corrective Action(s): Staff must adhere to good hand hygiene practices to prevent potential contamination of foods. Staff must review hand hygiene practices and proper handwashing. Further issues related to hand hygiene will result in the issuance of a violation ticket.

Observation (CORRECTED DURING INSPECTION): Use plastic zipper bags were stored around the kitchen area. This is a continuing violation.
Corrective Action(s): Plastic bags are intended for single use and cannot be properly washed and sanitized. Staff must immediately discard single use bags after each use. Plastic bags were discarded at the time of inspection.

Comments

-Follow-up inspection to August 15, 2023.
-Facility has removed all non-food grade dyes and replaced them with dyes intended for the manufacture of foods.
-Bleach sanitizer pail was properly labelled and tested at 200ppm. Ensure pails are always properly labelled.
-Did not observe foods in opened metal cans at the time of inspection.
-Both staff had valid FOODSAFE Level 1 equivalence - valid until September 06, 2028.
