A routine inspection was conducted, the following observations were made:
- Cooler 4C; cold room (storing chocolate) was 16C; freezer was -15C; and thermometers present.
- Quats sanitizer was 200ppm
- General sanitation level is good.
- No signs of pests. Shelves have been pulled 3 feet away from walls, and door guards found along the base of exterior doors.
- All foods stored in closed containers; stored 6" off the floor on racks or shelves; and containers covered.
- Installation of a new walk-in-cooler was in the process. The cooler was found where the 2-comp sink was, the the sink will be relocated to the side of the walk-in-cooler. This is acceptable.
- All surfaces are smooth, durable, sealed, level, and cleanable.
- Owner is thinking of installing a drying room on the exterior of the building. The room will be an extension of the building. He is planning on permanently installing a trailer to the building. The inside will be built to meet food standards, and it will be sealed to the building to prevent pest entry. It will be attached and extending out from one of the loading bay doors.
ACTION: Speak with the City's Building Inspector and Fire Inspector to determine if this is allowed and when requirements you will need to meet.
- COVID-19 plan in place, measures being followed are: workers designated to specific stations which are greater than 2m apart; masks worn; hand sanitizer available to staff; health check done daily; and increased cleaning of surfaces.
- All in order.
- Discussed inspection report with the owner, no signature obtained due to the pandemic. |
