Observation: The door frame and surrounding walls are damaged and unsealed drywall is present. Unsealed drywall isn't cleanable.
Corrective Action: Repair the damaged areas so the surfaces are level, smooth, durable, painted and cleanable.

Comments

General:
Coolers 4C or colder; freezers -15C; and hot holding is 2 hours rule (rice only). Thermometers present
- High temperature dishwasher was 80.2C at plate's surface.
- Hand sinks stocked with liquid soap, paper towels, + running hot + cold water.
- General sanitation level is good. No signs of pests.
- No expired foods in use. FIFO rule followed.
- Foods stored in food grade containers; covered; in groups with raw proteins separate or below RTE foods; and 6" off the floor on shelves.
- Food containers stored on shelves and sanitized prior to use.
- Bean sprouts stored in ice-water solution during service.
- Minimal ice build up in chest freezer. Chip ice away to ensure lid closes tightly.
- Foodsafe certified staff (owner's cert. valid until 2020). Send staff to obtain the certificate as there must be one person working at all times, who has the certificate.
- Bleach present for sanitizing.
