Observation (CORRECTED DURING INSPECTION): Used ice cream scoop was stored in the dipper well which was not turned on.
Corrective Action(s): As previously discussed, the dipper well must be turned on if it is used to store utensils in between uses. Otherwise, utensils must be cleaned and sanitized after each use. Ice cream scoop was cleaned and sanitized at time of inspection.

Observation: Ice machine is due for cleaning/sanitizing. Small amounts of biofilm growth noted on interior surfaces of ice machine. Operator stated the ice machine is cleaned once a month.
Corrective Action(s): Empty ice bin, then thoroughly clean and sanitize all parts of the ice machine. As previously discussed, create a cleaning log for the ice machine to keep track of dates cleaned/sanitized. Clean ice machine more frequently if needed.

Observation: Prep cooler doors and handles were greasy or had food residue on them.

Comments

- All hand washing stations were properly supplied with hot and cold running water, liquid soap, and paper towels
- Sanitizer buckets were measured to contain Quat solution at 200 ppm
- Dishwasher final rinse cycle measured at 100 ppm chlorine residual
- All coolers were measured to be at 4C or colder
- Freezers were measured to be at -18C or colder
- Accurate thermometers available for use
- All hot held food items were measured to be above 60C
- Pooled egg mixture was stored in prep cooler at time of inspection, and only a small portion was kept in the insert - good. *Reminder that eggs can only be stored at room temperature for 2 hours.
