Follow up inspection:
-Digital probe thermometer was available on-site and it was in good working order.
-It was reviewed that the food contact surface of the probe thermometer must be cleaned and sanitized prior to use. It was reviewed that cooked potentially hazardous food (e.g. eggs and rice) must reach an internal temperature of at least 74 degrees C before it is served.
