Observation: Mouse droppings observed on sushi prep shelves, on dishes, on food prep counter in the back, next to knives, inside bowls etc. High risk of cross contamination and transmission of disease.
Corrective Action(s): Wash/rinse/sanitize all above noted areas and entire premises.

Observation: Significant pest infestation in facility. Mouse (live) observed running across floor in food prep area. Droppings observed on food contact surfaces, counter tops inside dishes, under dry storage shelves. Pests can transmit disease and pose risk to public health.
Corrective Action(s): Deep clean entire premises and the above noted areas. Sanitize the surfaces using 1000ppm chlorine solution (1:50 ratio). Allow surfaces to air dry. Continue to store dry goods in pest proof containers.

Observation: 1) Ventilation hood panels observed having significant grease build-up. This imposes a risk of cross contamination of food and a fire hazard.
2) Food debris build up observed inside coolers.
Corrective Action(s): Clean/sanitize all hood panels in the dishwasher. Ensure this is done routinely. Deep clean all cooling units on a routine base.
