Observation (CORRECTED DURING INSPECTION): No sanitizer available for use during operation. Operator has advised the sanitizer is prepared in a bucket as well as in a 3 compartment sink when the dishwasher comes at 2:30pm. 200ppm chlorine solution was prepared in a bucket at this time. Operator was advised to use the solution to sanitize all prep surfaces at this time.
Corrective Action(s): Ensure to prepare 100-200ppm chlorine and sanitize all prep surfaces before initiating any food prep in the morning, after each possible contamination and every 2 hours during operation, as discussed at this time.

Routine inspection conducted:

-Handwash stations adequately supplied.
-Coolers operating at/below required temperature of 4'C; Freezers operating at/below required temperature of -18'C.
-Hot-holding not in use at this time. Thermometers available for temperature monitoring.
-General food storage practice satisfactory. All foods contained/covered with food grade materials in walk-in cooler.
-Ventilation canopy hood serviced. Next service scheduled for July 2019.
-Equipment/tools maintained in sanitary condition.
-3 compartment sink equipped properly for manual dishwashing.
-Back/Upstairs storage areas satisfactory. One large chest freezer in use upstairs.
-Professional pest control company contracted for monthly visits. Axiom.
-Traps in place. No evidence of pest activity observed at this time.
-Washroom handsink satisfactory.

Facility maintained in a good sanitary condition. However, floors underneath and the sides of the deep fryers require more frequent cleaning.
