308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) High temperature dishwasher is leaking. There is water pooling under and around the dishwasher. This is promoting and breeding pests (flies).

2) 3-comp dishwashing sink drain pipe, middle sink, is leaking. Water is dripping and pooling on the floor, this will attract and harbor pests.

3) White, upright cooler beside the 3-comp sink is 10C (stored condiments and marichino cherries). This is too warm and will allow bacteria and germs to grow in number, and food will go bad quicker.

4) Front, u/c concenssion cooler (was 2C), storing non-potentially hazardous dips, door does not close tightly as the lock is broken. Cold air is constantly leaking out causing the compressor to run and use more electricity.
Corrective Action(s): 1) Call a dishwashing maintenance company in to service/fix the dishwasher, so it no longer leaks water. Have staff mop up the pooling water throughout the day.

2) Call a certified plumber to repair/replace the leaking drain pipe, so it no longer leaks. Have staff mop up the pooling water throughout the day, and wash all the food debris off the drain pipe.

3) Immediately remove all potentially hazardous foods out of the cooler and store in a working cooler. Post a sign on the cooler and inform staff that only shelf stable items shall be stored in the cooler. Contact a company to repair the cooler so that can maintain 4C or colder at all times. Manager informed staff of the cooler and relocated the food items to a working cooler, during the inspection.

4) Call a company to repair or replace the door lock, so the door can close completely.

Observation: The dry storage room walls are damaged, paint has chipped away exposing drywall. Drywall is not cleanable, it will absorb foods and attract pests.
Corrective Action(s): Repair the walls so they are durable, smooth, level, sealed and cleanable.

Comments

A routine inspection was completed:
- Coolers 4C or colder; hot holding units (butter) above 60C; thermometers present; and temps recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in 3-comp sink and spray bottles had 200ppm strength. Valid test strips present.
- High temperature dishwasher had a rinse cycle temperature of 77.4C at the plate's surface, as per max/min thermometer.
- General sanitation level is good.
- All foods stored in food grade containers; covered; labelled; date coded (MRD stickers); foods stored in groups; and foods stored 6" off the floor on racks and pallets.
- No expired foods in use or for sale. FIFO rules being followed.
- Valid FoodSafe certified staff present.
- No signs of pests. Contract with a professional pest company in place to monitor and eliminate pests. Tin traps and snap traps present.
