- Mechanical Dishwasher: Low Temperature (chlorine): Ok. Ensure all food contact surfaces are washed and disinfected after use, or on a timely manner.
- Bar Glasswasher not being utilized. Area is to be kept clean and organized.
- Wiping cloth storage reviewed: Ok. Cloths are to be kept completely submerged.
- Food storage: Previously discussed. Limit quantities of perishable items stored at room temperature. Quick turnover required. Storage of items on ice discussed. Prep lines are to be kept completely filled with inserts while cover is opened.
- Chemical storage: Ok.
- Sanitary Facilities: Ok. Single use towels in a dispenser is required to be kept at bar handsink.
- Sanitation: Facility is to be kept clean and organized at all times. Cleaning of hard to reach areas (ie: above ovens, etc) is to be conducted routinely. Prep lines are to be kept clean and organized.
- Staff Hygiene: Discussed.
- Sttructurally: Upgrades noted. Keep it up. Ensure all surfaces are kept in good repair.
