Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher had 0ppm chlorine measured after final rinse. Sanitizer bottle was empty at the time of the inspection. Staff did not understand the situation and advised the operator would be in soon.
Corrective Action(s): Operator was on site at the end of the inspection and replaced the sanitizer bottle. After priming the tube, the minimum level of chlorine (50ppm) was achieved at the plate level after final rinse.

Comments

Routine inspection conducted:

- Handwashing stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; Freezers operating at/below -18'C.
- Hot-holding unit operating above 60'C.
- 200ppm chlorine solution available in spray bottles. Ensure to have all bottles properly labelled as 'sanitizer'.
- Foods obtained from approved sources. Receipts checked at this time.
- Front servery satisfactory. Washroom satisfactory.

NOTE: Ensure to have all newly hired staff properly trained as discussed.

General sanitation level had improved from the last routine inspection. Ensure to have all hard to reach areas cleaned on a more regular basis as discussed at this time.
