Observation: Final rinse on the high temperature dishwasher tested at 68c (at Plate level). Must be a minimum of 71c (at plate level)
Correction: Operator may use dishwasher to wash but must set up a sanitizing sink at 100ppm bleach to soak utensils for 2 minutes then let air dry. Resanitize all utensils as discussed.
