302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1. Low temperature dishwasher had a sanitizer rinse residual of 10 ppm chlorine at the utensil surface (required: 50 ppm chlorine or more). Dishwasher tested for multiple cycles.
2. One bottle labeled "bleach," that staff stated contained bleach sanitizer, had no detectable chlorine bleach. Wiping cloths not stored in sanitizer when not in use.
Corrective Action(s): 1. Dishwasher sanitizer was primed by staff, and dishwasher was then capable of maintaining a sanitizer rinse residual of 100 ppm chlorine at the utensil surface over multiple cycles, after priming once only. Ensure all equipment and utensils are re-sanitized.
2. Sanitizer re-made and tested at 100 to 200 ppm chlorine bleach. Bleach water sanitizer was also prepared in buckets at this concentration (one in front area, one in kitchen) for storing wiping cloths when not in use.

Observation (CORRECTED DURING INSPECTION): Employee observed washing gloved hands.
Corrective Action(s): Disposable gloves are single use and are not intended to be washed. Employees must discard gloves and wash hands properly before putting on a new pair of gloves. Employee discarded gloves and washed hands properly. Ensure proper hand washing and glove use practices are in place. Repeat violations may lead to further enforcement action.

Observation (CORRECTED DURING INSPECTION): Raw meat stored above ready-to-eat food (e.g. lime, ginger).
Corrective Action(s): Raw meat relocated so that it is not above ready-to-eat food. Ensure all raw animal products (including raw meat and eggs) are not stored above ready-to-eat foods. If meat/eggs drip, they may contaminate food below.

304 - Premises not free of pests [s. 26(a)]
Observation: Mouse droppings observed in the following areas:
1. Dry storage area
2. Dishwasher area
3. On small table under slicer
In addition, two bags of flour located in one plastic bin were found to have rodent chew holes in them.
Corrective Action(s): Areas noted above were in the process of being cleaned and sanitized with bleach at time of inspection. Bags of flour discarded. No other damaged food product observed. Most items stored in sealed bins (food product checked--no damage).
Premises is serviced by pest control on a monthly basis. Last available pest control service report dated October 31, 2023 indicated 0 rodent traps had activity (interior).
The following action is required:
- Ensure food is protected from contamination. Tightly seal all food storage bins immediately after use. Date to be corrected by: Immediately and ongoing.
- Increase frequency of cleaning and sanitizing. Date to be corrected by: Immediately and ongoing.
- Locate and seal additional potential pest entry points. Date to be corrected by: December 7, 2023.

Observation: Items not required for food premises operation observed on site (tools, equipment that is not being used).
Corrective Action(s): Storage of these items on site may provide potential pest harbourage areas, make it difficult to locate potential pest entry points and areas of pest activity, and make it difficult to properly clean and sanitize.
Remove all items not required for business use from the premises. Date to be corrected by: December 7, 2023.
