The following items have been corrected:
-->"Hamilton Beach" hot holding unit is intended to be used to keep rice warm, not over 60oC. Staff will be time tracking rice and discarding after 2 hours.
-->Paper towel in dispenser (container but accessible) present at bar sink
-->Paper towel at cooking line handsink now accessible
-->Open dry goods are now in food grade containers
-->Most of the cleaning is done
-->Thermometer is present for coolers at oven area
-->Loose hinges have been fixed

Still outstanding:
-->Some areas still require cleaning: 1) floor around dishwashing area (grime still noted under dump sink); 2)bottom compartment of deep fryers
-->Paper towel dispensers have been ordered for staff washroom. Ensure paper towel is in dispenser once dispenser is delivered.

Spoke with head chef regarding recommendation on recording dishwasher and glasswasher concentration, and also following through with temperature log (log all actions down).
