Observation (CORRECTED DURING INSPECTION): Found cooked small potatoes sitting out on counter for over 30 mins, temperature was 8 C.
Corrective Action(s): Replace items taken from cooler for specific orders as soon as order is complete or finished with the item taken out of the cooler. Do not leave on the counter in between orders, if popular item keep in an insert in the sandwich prep cooler so food item can stay below 4 C at all times.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Meat slicer was found to only be wiped down after use, large build up of food and grease under blade cover.
Corrective Action(s): MUST wash and sanitize entire meat slicer after each use or every 4 hours if using continually.
Take all removable pieces apart to properly wash then spray with sanitizer and air dry.

Observation: 1. Found onions and potatoes sitting directly on the floor.
2. Found foods put away in the walk-in cooler with out being covered.
Corrective Action(s): 1. Ensure all food and food contact surfaces (i.e. take out containers) are stored at least 6" or 15 cm off of the ground to protect from contamination.
2. Ensure all food is properly covered when put away either with secure lids, plastic wrap or tin foil to protect food from contamination.

Observation: Found floor drain open without cover by 2 compartment sink.
Corrective Action(s): Ensure the floor drain has a cover to prevent entrance of pests such as rats and mice.

Observation: 1. Slight food and grease build up in hard to reach areas under, between and behind equipment and shelving units.
2. Found grease seeping from the back side of the ventilation unit.
Corrective Action(s): 1. A deep cleaning is required including under, between, and behind all equipment and shelving units throughout the premises.
CORRECT: 1 week.
2. Ventilation unit is almost due for a professional clean, have them address the oil seeping out the back side, holes may be present which will need to be addressed. Filters can be removed and washed either by hand or in dishwasher, this should be done either every 1 - 2 weeks.

NOTE: temperature records are not being maintained, ensure to write down temperatures of all refrigeration units daily.
- Hand sinks had liquid soap, paper towel, hot and cold water
- Sanitizer spray bottles had 200 ppm chlorine
- Dishwasher had a final rinse of 100 ppm chlorine, test strips are available
- No signs of pest activity noted during inspection, mouse traps are on site.
