Premise is sanitary. No signs of pests. Hot and cold water available. hand washing sink with liquid soap and paper towels in use. Food protected from contamination. 2 compartment sink in use. 200 ppm Quat sanitizer in use. Daily chemical testing in use. Dishwasher final rinse at plate at above 71C. Hydrogen peroxide7% DIN 024064 for common touch contact surfaces only. Linen launder on site at high temp. w/ bleach. Dry storage satisfactory. No food products stored on grease trap - good. Permit posted at front desk. Cooler at 4C and below and freezer at -19.2C. Temperature monitoring and logs are in use. New kitchen staff is certified in FoodSafe Level 1. Reminder: For food contact surfaces, use the food grade sanitizer Quat (pink) sanitizer at the correct concentration of 200 ppm to 400 ppm. The hydrogen peroxide solution (light yellow) is very strong and is not a food grade sanitizer.
