- Handsinks are equipped with hot & cold running water - 200ppm QUAT sanitizer available - High temp dishwasher reached 71.5C at plate's surface - Prep coolers and walk in cooler measured <4C - Walk in freezer measured -12C. **Monitor this walk-in freezer and ensure that the temperature maintains at or below -18C - Foods are stored in a manner that protects against contamination - Noticed a few flies, but not too severely infested. There is UV light in deli area. - General sanitation is good - Staff monitors temperature of coolers/freezers consistenly
