Observation (CORRECTED DURING INSPECTION): 1) The following items were observed to be at 21-27degrees Celsius during inspection:

- Egg Tart and Puff Egg Tart

These items are all considered to be potentially hazardous food items unless product testing occurs to determine that food items are non-potentially hazardous. Currently facility is recording times that food item has been made and discarding after two hours. Facility was not approved for this process. Facility was approved to hot hold all potentially hazardous food items at a temperature of 60 degrees Celsius or greater. At no time was facility permitted to store potentially hazardous food items at temperatures of less than 60 and greater than 4 degrees Celsius. Do not alter food safety plans without Health Approval.

Head Baker explained that food items are time recorded after they are removed from oven and placed in Hot Holding unit. At no time is the time of the food recorded for those items that area being stored at room temperature. UNACCEPTABLE PRACTICE.

Owner is to submit food safety plans to Health Department for Approval prior to this process occurring at facility. DO NOT STORE FOOD OUT AT TEMPERATURES OF LESS THAN 60 DEGREES CELSIUS WITHOUT PRIOR APPROVAL FROM HEALTH DEPARTMENT. TICKETABLE OFFENSE.

Facility must label ALL food times as "DISPLAY ONLY" in display case at temperatures less than 60 degrees - NOT FOR SALE. Discard products at the end of day. Not for consumption. Not to be accessed by public.
