Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation:
1. Ice machine has mould growth on the inner walls.
2. Fan grates/covers and walls of walk-in cooler have heavy accumulation of mould.
3. Ventilation canopy baffles have extreme grease buildup.
4. Inside of dishwasher has grime accumulation on propellers and inner walls.
Correction:
1. Remove and discard current ice in the ice machine. Clean and sanitize inside of the ice machine as per manufacturer's instructions.
2. Clean and sanitize inside of walk-in cooler. Ensure all food items are covered and protected from contamination.
3. Clean baffles of ventilation canopy.
4. Clean inside of dishwasher, including the propellers and inner walls.

Ensure to follow a regular cleaning schedule for the areas listed above.

Observation:
Sponge and dish soap found at the prep sink near the freezer.
Correction:
This sink is to be used as a prep sink, not a dishwashing sink. Remove sponge and dish soap from this sink. Ensure all dishes are properly washed, rinsed and sanitized in the dishwasher.

Adequate handwashing stations not available for employees [s. 21(4)]
Observation:
No paper towels in dispenser at hand washing station near the dishwasher.
Correction:
Refill paper towels dispenser for hand sink. Ensure all hand washing stations are fully equipped with liquid soap in a dispenser, paper towels in a dispenser and hot/cold running water at all times.

Observation:
No drain plugs available for 2-compartment sink.
Correction:
Obtain proper-fitting drain plugs for the 2-compartment sink.

Follow up Inspection:
- The following has been cleaned:
Inside of ice machine.
Inside of dishwasher.
Fan grates/covers and walls of walk-in cooler.
Ventilation canopy baffles.
Under and behind cookline.
Inside all prep coolers.
Majority of the ceiling panels have been cleaned and bleached.
Shelves and storage areas.
Outside of dishwasher.
- Prep sink near the freezer does not have a sponge or dish soap. Reminder that this sink is to be used as a prep sink, not a dishwashing sink.
- Prep sink beside walk-in cooler is now unclogged and drains properly.
- Drain plugs available for the 2-compartment sink.
- Hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
- All food items covered and protected from contamination.
- All chemicals are clearly labeled.
- Lighting in the back storage room has been replaced and is much brighter.

The following still requires your attention:
- Operator stated in an email sent to the health inspector that a few ceiling tiles with permanent stains will be replaced. Please ensure to regularly clean the ceiling tiles or replace them as needed.
- In addition, the operator stated that the unused equipment in the back will be removed. Ensure to only keep items/equipment onsite that is needed for the operation of the facility.
