- Coolers measured 4C or colder with the exception of the drinks cooler at 9C. Ensure that no potentially hazardous foods are stored in this cooler.
- Freezers measured -18C or colder
- Bleach sanitizer >200ppm chlorine - use 5mL of unscented household bleach in 2.5L of water for a 100ppm solution
- Dishwasher measured 71C after the final rinse cycle
- Sushi rice pH 4
- Handwashing station stocked with soap, paper towels and hot and cold running water
- FOODSAFE requirements met at the time of inspection
- Thermometer available for the sushi bar cooler as per previous inspection
