- dishwasher has 50 ppm Cl in the rinse cycle
- 100 ppm Cl solution available for wiping cloths

- pest control in place
Reminder: use shallow pans, cooling wands, ice baths or walk in freezer to assist in rapid cooling of foods. Foods must be cooled to 20 degree Celsius within the first 2 hours and to 4 degree Celsius within the next 4 hours. .
