Observation (CORRECTED DURING INSPECTION): Three severely dented cans were found in the walk-in cooler.
Corrective Action(s): Ensure stock is checked upon receiving to ensure it is in good condition. The safety of severely dented cans cannot be verified. Canned items were removed from the kitchen at the time of inspection.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: High temperature dishwasher is not working. Dishwasher is waiting to be serviced. Facility is currently using single use disposables for food service.
Corrective Action(s): Dishwasher must be serviced and be able to supply a final rinse temperature of 71C on the dish surface on consecutive cycles. Contact the inspector when the dishwasher is serviced and in good working order.

Comments

-Both walk-in coolers were at 4C.
-Walk-in freezer was at -18C.
-Upright freezer unit was at -13C/-17C.
-Hot holding was greater than 60C.
-Temperatures checked and recorded daily.
-Equipment is currently being washed in the pot washer while the dishwasher is being serviced. Pot washer had a final rinse of 71C on the pot surface.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray bottles labelled and tested at 200ppm.
-Deli slicer was found to be clean and sanitary. Staff are properly disassembling the slicer for cleaning and sanitizing after each use.
-Foods stored off the ground and scoops stored in a sanitary manner.
-General sanitation good at the time of inspection.
-Facility serviced by professional pest control. No signs of pests noted at the time of inspection.
-FOODSAFE Level 1 equivalence valid until Dec 21 2028.
