Observation: 1) Accumulation of food debris/oil build-up observed on floor underneath cooking equipment in kitchen.
2) Under counter shelf requires cleaning.
Corrective Action(s): Ensure to have the area cleaned as agreed at this time. Remove garbage bag from the shelf. Cover trays that are not used often.

Comments

Routine inspection conducted:

- Handwashing stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; Freezers operating at/below -18'C.
NOTE: Hot-holding units were not on at the time of the inspection.
- Low temperature dishwasher achieved 50ppm at plate level after final rinse.
- Glasswasher at front achieved >71'C at final rinse.
- 200ppm chlorine solution available in buckets to hold wiping cloths and spray bottles for the front.
- Dry storage area satisfactory.
NOTE: Have the lids washed on a more regular basis.
- Proper thawing method observed at this time.
- Condiment coolers at front maintained in sanitary condition.
- Professional pest control company contracted. Traps in place.
