Observation (CORRECTED DURING INSPECTION): Meat slicer guard observed to have a small amount of food debris present. Slicer not in use at the time of inspection. Blade observed to be free of food debris.Slicer guard was placed in dishwasher to be washed during the inspection.
Corrective Action(s): Use a flashlight to verify cleaning of the slicer.

Observation (CORRECTED DURING INSPECTION): Wiping rags observed not stored in QUATS sanitizer solution. Operator prepared a new QUATS sanitizer solution bucket during the inspection and tested at 200ppm.
Corrective Action(s): Always ensure wiping rags when not in use, are kept fully submerged in a QUATS sanitizer solution. The solution should be changed every 2 hours or as needed.

Observation (CORRECTED DURING INSPECTION): Raw hamburger patties stored above ready-to-eat food items. Operator relocated raw hamburger patties to adjacent cooler where other raw foods are stored.
Corrective Action(s): Always ensure raw potentially hazardous foods are stored below ready-to-eat foods to prevent cross contamination.

Observation: Underside of shelving above the cooking/food prep surfaces observed to have food splatter build up.

**Note: Small opening observed beside the lock on the back door which can allow the entry of pests (eg. flies). Recommend using weather stripping to seal opening.

Dishwasher observed at 118F, soap observed dispensing into wash cycel, chlorine sanitizer residual measured at 100ppm.
All cold holding observed at less than 4C.
Temperature monitoring being maintained.
Handsinks fully stocked with hot/cold running water, liquid soap, and paper towels.
No pest issues observed.
