Observation:
Inside of ice machine required cleaning along white plastic.
Corrective Action(s):
1. Remove ice.
2. Clean and sanitize inside of ice machine according to manufacturer's instructions.
3. Make ice again and discard first batch.
Ensure to follow your sanitation plan for cleaning inside of the ice machine. To be corrected today.

Observation (CORRECTED DURING INSPECTION):
Low temperature dishwasher sanitizing with 0 ppm chlorine. Operator called technician during the inspection who came and serviced dishwasher. After servicing, low temperature dishwasher was sanitizing with 50 ppm chlorine.
Corrective Action(s): Obtain chlorine test strips to measure and monitor concentration of low temperature dishwasher.

Routine Inspection:
Hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
All coolers (except cooler beside beverages menu board - see under NOTES below) maintained at 4 degrees Celsius or below.
Stand-up freezer maintained below -18 degrees Celsius.
Hot holding maintained above 60 degrees Celsius.
QUAT sanitizer = 200 ppm.
Ice scoop stored in designated slot in ice machine.
General food storage practices very good:
- All food items covered and protected from contamination.
- All food items stored at least 6 inches off the floor.
- Dry storage shelves well organized.
No signs of pest activity at the time of inspection.
Washrooms clean and sinks fully equipped with liquid soap, paper towels and hot/cold running water.

NOTES:
Operator is in process of replacing caulking along dish pit.
Cooler beside beverages menu board maintained at 8.1 degrees Celsius. This cooler holds orange juice, sodas and alcohol. Ensure that no potentially hazardous foods or drinks are stored in this cooler unless the temperature is maintained at or below 4 degrees Celsius.
