Observation (CORRECTED DURING INSPECTION): 1) Chlorine sanitizer solution was not at an adequate concentration (100ppm or higher) for sanitizing food contact surfaces
2) Wiping cloths are being stored on the counters and have no detectable chlorine sanitizer residual.
Corrective Action(s): Wiping cloths must either be:
1) Stored in the chlorine sanitizer solution (>100ppm concentration) when not in use, or;
2) Used with chlorine sanitizer in a spray bottle (ie. spray surface with chlorine sanitizer, then wipe with the cloth)
Corrected during inspection (chlorine solution refreshed w/ bleach and employee placed wiping cloths into the solution)
